VECA Experiences Farm to Table Service Learning

August at Valdosta Early College Academy culminated with a harvest! Launched in the spring of 2017, the then VECA Junior class—with the assistance of County Agent Josh and Master Gardener Annie—built on-campus raised garden beds and planted an edible garden: donated soil, herbs and potato slips from Dasher Nursery. Rotating watering and weeding duties, the Juniors were able to enjoy a bumper crop of herbs in a pasta salad before school let out. Junior co-teacher Meredith Hall tended the garden during the hot summer months and assigned her 2017-2018 AVID class to tend and gather the new current crop of sweet potatoes. “They have to cure for ten days,” Ms. Hall reported, but has promised a fall meal of sweet potatoes, prepared by the VECA lunchroom staff. “They’re our babies,” the now-seniors cooed, while cradling the fruits of their labors.
